Paleo Challenge Completed

Okay, so I don't know how many people kept up on our challenge with us, but if you did, awesome! We completed it February 10. So yes, I know, over a week ago.  I'm just now reporting and I'm happy to say it was a SUCCESS!  Success as in, I lost a total of 5 lbs and one inch.  Yes, only one, but I have keep reminding myself to not get discouraged, and just be grateful that it was a loss, instead of a gain.  Buck lost 6 lbs and 1.5 inches.  But the biggest reason why I called it a success is because of how much I LIKED this challenge! I honestly thought I would be on here reported how happy I was to get it over with.  Guys, I loved this food.  And loved how I felt! Once the challenge was over, Buck and I celebrated by eating what ever we wanted for the day.  We chose pizza and donuts. (Ugh, didn't we learn anything??) The answer is yes; I learned that I hate how I feel when I eat those foods.  I felt so sick afterwards that I almost threw up.  I had a gut ache, a headache, and I just felt bogged down and blah.  I feel so "clean" when I eat paleo food.  Don't get me wrong, donuts and pizza still taste good to me, but I just don't like how I feel.  So since Buck and I both like this diet so much, we have decided make a lifestyle change to a modified Paleo diet.  I feel that it's unrealistic to attempt to only eat Paloe food for the rest of my life.  Should I? Maybe. But I just know that I wont. Not because I have a bad attitude, but because I still want to enjoy the occasional sweet every now and then.  Another big thing I learned, was moderation.  I thought I knew what this was, and I was mistaken. In fact, I learned so much, I'll list it:
Things I learned from Paleo:
Self control
Moderation
Variation (I ate so many new things that I never, ever had in my diet)
I got to know my body better
I slept better
I had more energy
I love exercising (Never thought that day would come)
Mind control
I am slightly lactose intolerant (but I kind of already knew this)
 
Things I loved about this diet:
Basically everything
EVERYTHING coconut
Sweet potatoes
Butternut squash
 
Things I missed:
Sugar
All sweets
Some breads
 
I thought that I would miss dairy like crazy, but I didn't! Nor did I miss pasta, which is weird. 
So, what Buck and I have decided to do, is we are going to eat paleo food all week long.  Then, we'll play it by ear on the weekends.  If something comes up, or we want to splurge, then we can because it's going to be like cheat day. (with moderation) But if we just hang out at home, we will eat paleo. Oh, and our workout schedule will stay the same :) 
 
This is the egg/omlet dish I make almost every morning.  This thing is packed with awesomeness, such as, mushrooms, zuchini, onions, garlic, pumpkin, ground flax seed, egg, shredded un-sweetened coconut, and spinach.  And half the time it also had turkey or pork sausage mixed in too.

And here is a pork dish we did in the oven, with garlic butternut squash and asparagus.  There are still so many things we want to try.
