First Paleo Update

So yesterday's post was the main, introductory post to fill everyone in on what we're doing.  As of yesterday, we are two weeks into this challenge, and according to my scale, I've lost 2 pounds. Haha. But hey, at least it's not 2 lbs gained right?  I'm also doing my workouts pretty hardcore, so maybe I'm gaining some muscle?? Let's think positive and hope for the best :)
So, thanks to our cheat days, I've not gone totally insane.  And it's been way easier to stay away from the sugar, since I'm able to have some on Cheat Day.  I have a half gallon of ice cream I bought for my babysitters, sitting in there calling my name, even serenading me a little, and I have been strong! I've not even opened the freezer.  Can I just tell you, most of this challenge is pure mental.  Mind control.  Will power.  Things I don't have really.  I have such a BAD habit of picking.  All.Day.Long. All I do is pick!  Mindlessly! Even when I'm not hungry.  I am such a bored eater.  I didn't realize how bad it was truly, until doing this challenge.  I'm constantly finding myself in the kitchen looking for something to snack on.  And my brain will sit and tell me that I'm hungry, but if I think about how I feel, and how my stomach feels, I'm NOT hungry!  My mind is tricking me.  This is going to take a lot of training, to re-program my brain so that I can eat when I'm hungry and that's it.  That is almost harder than not eating sugar. 
Anyways, let's talk about what we're eating.  Guys, this food is GOOD! And I'm loving what I'm learning, and how much variety I have in my diet now!  I had no idea that I was basically only eating like the same 8 or 10 things over and over and over.  I've been taking some pics along the way of some of the food we have been eating.
So for breakfast, my usual go-to was a bowl of cereal, or if I felt ambitious, oatmeal.  Now we usually eat eggs, with vegetables.  In fact, I make a mean omlet, with onion, garlic, bell peppers, mushrooms, sometimes sausage, and lots of spinach or kale.  Oh, and we bought a bag of fine ground flax seed from Costco, and I usually throw a tablespoon of that into everything.  Even green smoothies.  Which is another thing we eat for breakfast, to break up the omlets.

We bought a food processor just for this challenge, and it was the best idea.  This is cauliflower hummus, recipe from Sarah's book.  We dip our veggies in it. YUM.


So this one was totally one of our favorites.  Spaghetti squash with meatballs.  The sauce is homemade with pure tomatos, and you eat it over steamed spaghetti squash.  We.LOVED.it!  Seriously didn't even miss the pasta, and felt amazing afterwards :)


These are mini-meat loaves with our homemade ketchup on them.  They were good too.

My favorite thing right now, is sweet potatos.  You can't have any other potato on this diet, except sweet potatoes, and I'm not complaining at all.  These are seriously more like a treat for me than anything.  I bake them in the oven until fork-tender, then slice them up, and fry them in a skillet with some coconut oil, sea salt, and pepper.  Baking them keeps all of the natural sweetness of the potato right inside, so it stays way sweet.  We do this with beets and butternut squash as well.  You guys are missing out if you don't like sweet potatoes.  I've made them for almost every meal.  They also make great hash browns to go with your breakfast omlet. :)

So this is a tuna patty. A what? You're thinking, while giving a stink eye. I thought the same thing.  However, these things have quickly become a favorite around here!  Like I said, we love fish around here, tuna included.  With these, I used my food processor to purify zuchinni, onion, garlic, flax seed, bell peppers, mushrooms, and any other veggie you like.  I do cut them up and saute them in some coconut oil to make them soft before throwing them in the blender.  Oh and I throw the canned tuna in as well.  Add some egg, blend all together, and then drop them into the skillet like patties and flip them like you're cooking hamburgers.  SOOO good.  We eat them with a veggie side and some ketchup.  For snacks, I'll eat things like blueberries, grapes, bell peppers, bananas, basically anything you can cut up or just pop in your mouth.  My favorite snack however has become something I never thought I'd even like: remember the fun, healthy snack you had as a kid called, Ants on a Log? Yep. I put almond butter on a celery stick, and I like using blueberries as my "ants".  I love this snack and it's always my go-to when I just have to have something.  Oh, and remember my almond flour I made?? Well, here are a few things I've made with it.
Hmmm, I thought I took more picturs of my bread items, but I guess I didn't.  So far I've made waffles, pancakes, zuchinni bread, and crepes.  Waffles above, crepes below.  And they were all so good.  See? We're not really going without the things we love.  You do have to eat them more sparingly, but you still can have them in your diet.  I made some home made honey syrup for the waffles, and the filling for the crepes is just crushed berries drizzled with some honey for sweetness, and then canned coconut milk to make them creamy.

So, there's my first update.  There are some more things we are going to make and try, and I'll try to take pictures.  This challenge has seriously been so fun.  Me and Buck both have gotten so into it, helping each other and doing research together.  We're both feeling and sleeping good, and it's so fun to have something in common that's new and exciting.  We're always calling each other, to tell the other about a new recipe we want to try, or how good something we tried was.  And my workouts are feeling, UH-mazing.  I'm sore afterwards, but I feel good, really pushing myself hard.  Now I just need to get to bed and I'll be doing well in all aspects of the challenge!
