
To welcome Fall this year, I made one of my favorite things to have during the fall, and especially around Halloween. CARAmel POPcorn! It's a recipe that I've used for so long I've lost the actual paper one and just recall it from memory now, but I love it so much I thought I'd share it :). It's not a secret one or anything, and some of you may even have a better one (if you'd like to please share it) but it's an old favorite and so easy to make!
You need:
1 cup of brown sugar
1 cup of karo syrup
1 can of Sweetened Condensed Milk
1 tsp of vanilla extract
1 stick of butter
3 bags of popcorn
Ok, so really good, and really fattening! So I'll tell you how I cheat so I feel a little bit better about myself. Instead of using regular brown sugar, I get the Splenda brand of brown sugar, I get the light karo syrup, don't do anything different about the sweetened condensed milk, (I haven't found a light one yet) and I only use 1/2 stick of I Can't Believe It's Not Butter brand butter. It all still works out I promise. I know, I know, it's still really sweet and fattening, but not as bad as the original recipe and c'mon, it's a welcome gift for fall so treat yourself! :)
Anyways, mix together the brown sugar and karo syrup in a pan and bring to a slight boil. CAUTION: if you get it too hot it's really easy to burn, and then it's ruined. I know this well from experience. As soon as you see bubbles add the can of sweetened condensed milk and stir on oh let's say medium heat or less for a couple minutes. It doesn't have to be way hot. Add the vanilla and then you can turn the heat down way low and add the butter. This makes enough to cover about 3 bags of popped popcorn, so if you don't want to make that much you can 1/2 it or improvise. Let it cool slightly and then poor and stir over your popcorn . TIP: after you pop you popcorn, as you put it into your bowl try to shake all the un-popped kernels to the bottom and not into your bowl. It's not very fun to be enjoying this sweet treat and munch down on a kernel. You can roll it into popcorn balls or eat it straight from the bowl, and me and Buck are both crazy about it.
